1) Quinoa With Black Beans

Ingredients

  • ½ cup of chopped up fresh cilantro
  • 2 cans of drained and rinsed black beans
  • 1 cup of frozen corn kernels
  • Ground black pepper and salt according to taste
  • ¼ teaspoon of cayenne pepper
  • 1 teaspoon of ground cumin
  • 1 ½ cups of vegetable broth
  • ¾ cup of quinoa
  • 3 cloves of chopped garlic
  • 1 chopped onion
  • 1 teaspoon of vegetable oil

Directions

  • Take a sauce pan and heat up the oil; do so on medium heat. Cook and stir the garlic and onion for about 10 minutes until they have become lightly brown.
  • Mix quinoa in the onion mixture and cover with the help of the vegetable broth. Season this using pepper, salt, cayenne pepper, and cumin. Boil the mixture. Cover it, reduce the heat, and then simmer until the quinoa becomes tender and the broth has been absorbed. This may take around 20 minutes.
  • Stir the frozen corn in the saucepan and continue simmering until they have been heated through and through for around 5 minutes. Mix the cilantro and black beans in.

2) Orange Roasted Salmon

Ingredients

  • 1 tablespoon of honey
  • 1 ½ tablespoons of lemon juice
  • ½ cup of orange juice
  • 1 tablespoon of dried parsley
  • 1 ½ teaspoons of garlic powder
  • 1 tablespoon of lemon pepper
  • 5 salmon fillets
  • 1 ½ tablespoons of olive oil
  • 1 thinly sliced onion
  • 2 oranges that are sliced in rounds

Directions

  • Preheat your oven to 200 °C
  • Take a small cup or bowl and stir dried parsley, garlic powder, and lemon pepper together in it. Place slices from one orange at the bottom of a baking dish of 9×13 inches in a single layer. On top of these orange slices, put a layer of the onion slices. Drizzle this with some olive oil and sprinkle this using half herb mixture.
  • Place this in your preheated oven and roast it for around 25 minutes until the onions have become tender and brown. Remove from the oven. Increase oven temperature to 220 degrees.
  • Push orange and onion slices towards the baking dish’s outer edge. Place salmon fillets right in the center. Season this with the remainder or your herb mixture. Whish honey, lemon juice, and orange juice together using a small bowl. Pour this on top of the salmon evenly.
  • Bake this for around 12 to 15 minutes in the preheated oven until the salmon has become opaque right in the center. Remove these fillets and keep them in a serving dish. Discard roasted orange. Garnish the fillets using fresh orange slices and roasted onions.

3) Lemon Herb Chicken

Ingredients

  • 2 sprigs of fresh parsley for garnishing purposes
  • 1 pinch of dried oregano
  • 1 tablespoon of olive oil
  • Pepper and salt according to taste
  • 1 lemon
  • 1 breast halves of boneless and skinless chicken

Directions

  • Cut the lemon into half and squeeze the juice from half of the lemon on top of the chicken. Season this with salt. Allow it to sit while heating oil in a skillet on top of medium low heat.
  • When the oil has been heated, place the chicken on the skillet. Add on top of this oregano, pepper, and juice from the other lemon half. Sauté this for around 5 to 10 minutes on each of the sides until the juices is cleared out. Serve this with parsley for garnishing purposes.

4) Granola Bars

Ingredients

  • 2 teaspoons of vanilla extract
  • ½ cup of vegetable oil
  • 1 beaten egg
  • ½ cup of honey
  • ¾ teaspoon of salt
  • ¾ cup of raisins
  • 1 cup of all purpose flour
  • ¾ teaspoon of ground cinnamon
  • ½ cup of wheat germ
  • ¾ cup of packed brown sugar
  • 2 cups of rolled oats

Directions

  • Preheat the oven to 175 ° Take a baking pan of 9×13 inches and grease it generously.
  • Take a large bowl and mix together salt, raisins, flour, cinnamon, wheat germ, brown sugar, and oats together. In the middle of this, make a well and pour vanilla, oil, egg, and honey in. mix thoroughly with the help of your hands. Evenly pat the mixture in the pan that you prepared.
  • Bake this for around30 to 35 minutes in your preheated oven until the bars become golden around the edges. Cool this for about 5 minutes and then cut in bars while it is still warm. If you wait for the dish to cool down, then it will be hard to cut.

  • 3 bunches of shredded, dried, and washed kale
  • 1 cup of bread crumbs

Directions

  • Heat the oil on medium to high heat in a frying pan. Add garlic and onions. Cook and stir until they become soft.
  • Mix in the breadcrumbs, and cook this and stir until they become brown
  • Stir in the kale and cook until it has become wilted. Serve this either warm or hot.
